Arla Foods Ingredients to launch fastest cream cheese manufacturing process, according to a report published on August 15, 2018.
The world’s fastest cream cheese manufacturing process will be launched by the company at Food Ingredients South America. According to the company, the new process is capable of reducing the time taken for cream cheese-making process from 20 hours to just 30 minutes.
The conventional cream cheese-making process is a very complex procedure, which takes around 20 hours. In the process, significant amounts of acid whey is generated, which makes the process inefficient, expensive, and occupies valuable space on the production line. However, with the new whey protein ingredient solution from Arla Foods Ingredients called Nutrilac CH-7694, these problems can be avoided and yield can be increased.
Nutrilac CH-7694 is capable of producing a cream cheese with excellent flavor and texture. It is easy to handle and highly versatile, which makes it suitable for further processing into products such as cheesecakes and sushi. The process using this is fast, as fermentation and separation processes are eliminated. This reduced the time for manufacturing, prevented production of acid whey, and requires less investment in machinery.
